Eggs 6 nos
Melam Egg Masala 3 tbl. spn. level
Onions (3 medium size)
Tomatoes 60 gm (1 big)
Ginger 1 " piece (2 tb.sp)
Oil 30 ml. (2 tb. sp)
Green Chillies 2 nos (optional)
Curry leaves a few
Salt to taste
Method of Preparation
Hard boil eggs, cool, remove shell and cut into halves. Slice onions, chop ginger and tomatoes. Heat oil, fry lightly sliced onions, ginger and curry leaves. Add the masala powder and fry well. Add tomatoes, salt and one cup of water. Cook till onions is cooked and gravy thick. Add slit green chillies if needed. Arrange the eggs in a dish and pour the gravy on top.
Instead of water one cup of cocounut milk or milk will improve the taste.
