Egg Roast

Ingredients
Eggs 6 nos
Melam Egg Masala 1 1/2 tbl. spn. level
Onions (3 medium size)
Tomatoes 60 gm (1 big)
Ginger 1 piece (2 tb.sp)
Green Chillies 2 nos (optional)
Curry leaves a few
Oil 30 ml. (2 tb. sp)
Salt to taste

Method of Preparation

Hard boil eggs and cut into halves. Slice onions, chop ginger and tomatoes. Heat oil, fry lightly sliced onions, ginger and curry leaves. Add the masala powder and fry well. Add tomatoes, salt and one cup of water. Cook till onions are soft and gravy thick. Add slit green chillies if needed. Arrange the eggs in a dish and pour the gravy over the eggs.

Instead of water one cup of cocounut milk or milk will improve the taste.
