Grind the ginger and garlic. Sauté the onions in oil, add ground masala, Melam chilli powder, Melam turmeric powder, then tomatoes and fry well till the oil comes out. Add the cleaned prawns and sauté well. Add salt and cook the prawns with the lid on. When the prawns are cooked, and the gravy as thick enough. Add the coriander leaves and remove from the fire.
Boil the rice and drain. Add lime juice and ghee. Layer 3/4th of the rice in a greased dish. Spread the prepared prawns over the rice. Sprinkle Melam garam masala powder. Spread the remaining rice on top and bake for 20-25 minutes. Garnish with fried onions and nuts. Serve hot.
